The Jury is Still Out

The Bottom Line: I would not recommend especially if the user does not make a lot of bread. The price is high considering the quality of the bread I have experienced so far.
I am a very heavy bread machine user and have gone through at least 5 machines over the last 15 years. This is my first Zojirushi and I wanted to treat myself since all the other brands I had previously had wore out quickly and I always ended up making my bread by hand. All reviews I had read made me think the Zo was for me, but I have been struggling with it more than I anticipated. I have had it for a few weeks and have made white, several multigrain, and whole wheat breads in addition to a chocolate cake, banana bread, pizza dough and cinnamon rolls. I have found that even with the crust control on dark (basic setting), the crusts are not browned at all on the top of the loaf, and I have to finish them in the oven. The custom setting only allows a maximum of 70 minutes for baking time, which still is not enough to finish a loaf. The wheat cycle does not even allow the user to set the crust control, so you have to take what you get. I tried making both 2 lb and 1-1/2 lb. loaves to see if the smaller loaves would bake more thoroughly, and it did not seem to make a difference. The chocolate cake recipe from the Zo book ended up very hard and dry on the bottom 2/3 of the cake, and the banana bread (my own recipe with approx. the same volume as the cake) was still doughy and I had to bake it in the oven for the remainder of the time. There is a keep warm function for 60 minutes, which I have used once and found that the bread fell and was soggy even though it was only about 30 minutes, so I would not recommend using that option. I have to say that the dough cycle worked wonderfully, but for the price I would like to have a machine that does it all. I will continue to experiment and hopefully the Zo and I will come to some kind of compromise that does not involve so much effort on my part.
