We decided to take two of Paso Robles' most popular varieties, Syrah and Cabernet Sauvignon and combine them for a wine that has a big, bold expression of fruit with layers of beautiful spice, but still keeps with the trademark JUSTIN expression of the nicely balanced Bordeaux style. The result is SAVANT; a wine that is big, bold and fun like many, but because of its wonderfully balanced flavors and structure, displays exquisite table manners for pairing with a wide variety of foods. Winemaker Notes - Justin Meyer, who you may know as the co-founder of Silver Oak Cellars in Napa Valley, began making port in the 1960s, and created Meyer Family Port in the 1980s. Which is produced from old vine California zinfandel with a bit of the traditional Port variety, touriga nacional. The zinfandel grapes are picked relatively early during the harvest, at approximately 24 degrees brix, to retain acidity in the finished wine. The current release 'Port 7' is a blend of vintages 1987 2001, with an average five years of oak aging and three years bottle age before release. This fortified port-style wine has been a winning idea for many years. We have been able to use some very ripe cabernet sauvignon in an unorthodox manner-- making a sweet wine by truncating fermentation midway through. This technique adds a bit of heat to sweet result, and we feel that its fruit-intense character requires very little barrel time, and no new wood. A fun alternative for dessert, and a way to extend JUSTIN pleasure through end of meal Deep ruby with a garnet rim. Sweet, ripe black cherry, dried plum, and fig.
