Nardini grappas are named for the Italian Nardini family who claim to have been making grappa (a spirit distilled specifically from wine grape skin and pits or pomace) from its founding in 1779 by Bortolo Nardini. They use both a traditional pot still and column still in their distillations from two different locations, presumably blending prodcut from each for a consistent product. Nardini Tagliatella is a grappa-based liqueur that is an aperitif using flavors of cherry. It is mean to strike a balance between bitter and sweet. They suggest serving with a ginger beer.

As in the past, The Spice Tree is made from 100% malt whisky sourced from northern Highland distilleries, (notably and primarily malt whisky distilled in the village of Brora). The primary maturation is in a mix of first-fill and refill American oak.What is different is the secondary maturation. Rather than using inner stave inserts, as we did for the original Spice Tree, we rack the whisky into barrels with heavily toasted new French oak heads. Hedonism is unusual in the Scotch whisky world: a blended grain Scotch whisky. It is very rare to see 100% grain whisky bottlings, in Scotland. Going back 100 years, grain whisky brands were more common, but they were overtaken in popularity by the big brands of blended Scotch, which comprised both grain whisky and malt whisky. Today, most Scotch grain whisky gets blended into the big brand names, typically at young ages. For Hedonism, we search for old casks of Scotch grain whisky. Pierre Ferrand Cognac is made with only Grande Champagne grapes, and the unfiltered wine is distilled over lees in small 25 hectoliter copper pot stills. Finally, the spirit is carefully aged in small Limousin oak casks and blended into its final expression. Redbreast is a very special whiskey within the Irish Distillers fortified as it's the only 12 year old Pure Pot Still available. It was first launched in 1939 as the brand name given to the pot still whiskey supplied by Jameson to whiskey bonders before bottling at the distillery became the norm in 1968. Stocks of whiskey in bonders' stores petered out, and thus Redbreast all but disappeared until its re-launch by the distillery in the 1990s as a single pot still whiskey. This pure pot still whiskey is matured for a minimum of 12 years in sherry casks and Bourbon barrels.
