This wine is from United States, California region, Mendocino County sub-region. Cooler fermentation (max 85 degrees Fahrenheit) using indigenous yeast were distinguishing aspects of the fermentation of this lot, as well as using 'rack-and-return' cap manipulation to gain maximum of desirable extraction. Throughout fermentation the kinetics of the process were slowed with cooling, and skin contact was limited to around two and a half weeks. The wine was pressed and racked to barrels when dry, before completing malolactic fermentation at maintained cool temperatures. A small percentage of pressed Chardonnay skins were added to this fermentation, approximately 5% by volume, which is a tricky technique we have found advantageous with a few of our red wine lots.
