In 1774, Richard Hennessy set up a small warehouse on the right bank of the River Charente to house his rarest eaux de vie, now known as the founder's warehouse. Since then, eight generations of the Hennessy family have built up what is now the finest collection of old eaux de vie in the world. The company was born when the Irishman Richard Hennessy, a mercenary for the French king, was compensated with land in the town of Cognac in France in 1765 and started a trading business, initially sending liquor back to Irish friends and relatives. His son, James Hennessy, expanded the business into the brandy production with which the town is now synonymous. Distillation: First distillation separates the unwanted types of alcohol and collects the best ones in a low - strength product called brouillis. Second distillation of the brouillis makes a new separation of alcohols, giving an eaux de vie, of approximately 70% alcohol to conserve all the aromas. Aging process: Croizet always distillates the wine with 10% of lees, which produces more complex aromas and essential oils in the Cognac. This process requires more aging than the regulatory 2 1/2 years. Croizet V.S. is aged for an average of 7 years. The Cognac is then stored in French oak casks. . Deep amber-orange hue. Fruity nose. Cognac is distilled, aged and blended in limited quantity and each bottle is numbered to insure its quality control. The nose shows wild flowers and wood stewed in caramel and honey. The flavors are supple, sweet and somewhat unstructured revealing more caramel, wood, taffy and frail spice. The finish is medium length displaying sweet, pleasant caramel with floral tones in the background. This is simple, young Cognac perfect on ice, in a cocktail, with tea or in a delicious recipe.
