Our Covey Run Semillon Ice wine shows intense aromas of ripe mango and pineapple, with floral notes of honeysuckle, and honey. These aromas are balanced with zippy acid (think lemon vanilla cream sandwich cookies) and a long, lingering finish. Imagine a cool, crisp winter night. Fresh snow is on ground and grapes are frozen on vines. That's when these grapes are harvested. Pressed while still frozen, grapes grudgingly yield a rich, concentrated juice that is fermented both in-tank and in new barrels. This wine is from United States, Washington region. Cove Run Winemaker's Collection Chardonnay is rich and round, yet with good acidity to showcase the fruit. Oak is used to complement, rather than dominate, the mouth-filling flavors of the grape: lush apple, pear and melon, which mingle with vanilla, hazelnut and toast tones, leading to a rich, lingering finish.

The dark red color, cherry fruit and warm, smoky toast flavors apparent in this wine are all trademark descriptors for Washington Merlot. At bottling we blended in a small percentage of Washington Cabernet Sauvignon and Cabernet Franc to add complexity to the Merlot character. The resulting blend is attractively fruity with a medium ruby color and, like all our wines, is well suited to be served as a companion to good cuisine. We cool fermented the juice in tanks at 55A F, and then arrested the fermentation by chilling the new wine which leaves it naturally sweet. The combination of high natural acidity and residual sweetness gives the wine body, flavor and intensity.

Grapes were harvested the first week of April, de-stemmed, chilled and lightly pressed. The juice was racked to 70% new and 30% one-year-old French oak barriques and underwent fermentation using native yeasts. This ’07 is ‘spot on’ Robert Young Estate Chardonnay. The intense, tropical aromas of guava, nectarine, melon and spice really show off the characteristics of the Robert Young clone. It has a supple mouth feel and bright flavors with hints of lemon and honeysuckle, backed by a big French oak barrel component giving it a soft finish that lasts forever. I’ve tasted a number of wines from 2007, and they were nearly all excellent- this was a superior vintage in Sonoma County.

As might be expected, this bottling is a bit lesser in scope than its Reserve counterpart, but it conveys a fine sense of very vital, slightly blossomy young fruit and gets very good marks for its accessible and amicable fruitiness.
