Liked it after I figured it out
As an experiment, I use the second grill to put the coals on. This took care of the problem with the coals and significantly stabilized the cooking temperature.

I love this smoker
I'm a former chef so i was used to crazy huge mega-huge smokers. I got this one because I wanted an inexpensive and small smoker for my backyard that I wouldn't have to hook up to a huge propane tank.

I received my Brinkman Gourmet from a marlboro miles catalog and tried it out for the first time today.
