The Brinkmann Charcoal Smoker is a disappointment.

Smoked meats may go back thousands of years to early civilizations, particularly poor wanderers. Smoking meat is an ancient and very popular method of preparing red meat or fish. The cooking technique helps preserve these protein-packed foods that would otherwise spoil. It also is very tasty. Cooking meat with smoke preserves in two ways; by dehydration, and by the curing properties of the chemicals in the smoke. Each prevent bacterial growth, making it possible to store the meat for extended periods without refrigeration. Smoke curing and drying meat were the only preservation methods besides salting that were available before refrigeration.
