92 Points - Robert ParkerThe mild and uneventful 2005 vintage presented ideal ripening weather. We anticipated optimal crop yields, juice quality, fruit flavors and chemistry. And because this overall weather pattern essentially extended the growing season, we began harvest much later than average. But once we finally ripped into the red grapes there was a massive tsunami of them: Cabernet, Zinfandel and Merlot! A solid and steady picking schedule, with a daily crush of 13 to 40 tons, continued for 18 days. It was an awesome period of ideal weather and harvest activity, during which we took in an amazing 473 tons of fruit.

We chose to make a 100% Cabernet Sauvignon rather than blend in other varietals so that we could create a real terroir wine that demonstrates true varietal character. Our 2006 Director's Cut Cabernet offers a rich perfume of plums, cherries, wild berries and cedar as well as dark, decadent flavors of blueberries, cassis, cocoa and spice. This vintage experienced a 20% reduction in crop yield. Having less fruit automatically enables the grapes to develop more concentration, which is exactly what happened here. Not only are the wine's tannins sweet and mature from the extended growing season, the flavors are ripe, lush and prolonged on the finish because of the fruit's immense concentration. This wine will drink well now while young, but it also has the structure to develop even more complexity in years to come.

The source is a very well known high end Cabernet producer near St Helena. Almost 32 barrels were blended with no fining, no filtration and one final racking to bottle. The story of the legend of Atticus John was told to us by an old farmer in Napa almost 2 years ago - That he had a several dozen large dogs and lived in the hills of Napa at the turn of the 20th century as a "homme sauvage" living off the land. It sounded genuine enough to capture and use for this wine.

From Robert Parker's "Value Issue": "This was a pleasant discovery during my recent tastings for this value report. The Cabernet Sauvignon Napa (50,000 cases produced) is a blend of 86% Cabernet Sauvignon and the rest Syrah, Merlot, and Petite Sirah. Its dark ruby/plum color is followed by sweet aromas of black currants, smoke, damp earth, licorice, and spice. Medium-bodied and pure with silky tannins as well as a surprisingly long finish, it should drink well for 5-8 years. It has been at least twenty years since I have had a Napa Cabernet this good for under $15 a bottle." (08/08) Avalon makes only Cabernet, one dirt cheap wine with a generic "California' name place, another, well...pretty close to dirt cheap Cab sourced from a variety of Napa Valley appellations. Just Cabernet, so it's lucky for them (and for us) that they handle this favorite grape so very well. The Napa Valley Cabernet Sauvignon is silky and ripe, with layers of cassis fruit and just a smidgen of both oak and tannin. A great Cab to have on hand during summer BBQs!

The 2005 Dynamite Vineyards Cabernet Sauvignon shows luscious blackberry, cassis, chocolate and cedar character from high-elevation vineyards in the Red Hills Lake County appellation. Fine grained tannins and balanced acidity gently structure the wine, while barrel aging adds toffee and oak spice nuances to the long, fruity finish. Enjoy this wine’s rich, velvety flavors with full-flavored entrées, such as lamb brochettes with garlic rosemary potatoes, marinated flank steak grilled over grape canes or hearty stew simmered with red wine.They destemmed and lightly crushed the Cabernet Sauvignon grapes and then fermented the must (juice and skins) with selected yeast in stainless steel tanks. A non vintage -rich blend of Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Malbec. Dry, complex, a subtle fruity bouquet dominates the palate.

Kenwood Vineyard's Sonoma County Cabernet Sauvignon is made predominantly of fruit sourced from vineyards located in the Sonoma, Dry Creek and Alexander Valleys. Each vineyard lot is kept separate throughout fermentation and aging to preserve the unique flavors of the individual vineyards that create this consistent, award-winning wine. The growing season of 2005 had a bountiful crop and near-perfect ripening conditions that allowed the fruit to reach its optimum flavor and maturity. After fermenting the grapes in stainless steel tanks, the wine was aged in French and American oak barrels for 23 months. Before bottling, Merlot and Cabernet Franc were added to the final blend. The result is a rich, complex, and fruity wine that has flavor reminiscent of black current jam and sweet pipe tobacco. Enjoyable now, the wine in this bottle will continue to improve with age.

The key to making great Cabernet Sauvignon is to ensure the crop load is balanced so that the grapes ripen evenly and develop concentrated flavors The rich flavors in this wine come not only from the Cabernet Sauvignon itself, but also from the addition of other red varietals: 9% Cabernet Franc for mouthfeel, 7% Merlot for added structure and complexity, 2% Syrah for richness and 1% Lemberger for fruit and spice The resulting wine has cherry, cranberry and vanilla aromas and flavors integrated with toasty oak A slight bell pepper note in the background adds complexity The texture is soft and velvety, with nice oak, vanilla and clove notes in the balanced and fine tannin finish Wine WASHINGTON STILL WINE
